Basic Herb Jelly


2 cups fresh, clean herbs
1 cup boiling water
1 cup cold water
2 cups sugar
juice of 1 fresh lemon
1 pkg (or pouch) Certo liquid pectin

Pour boiling water over herb, tincture 15 minutes. Strain into heavy saucepan, add cold water, sugar, and lemon juice. Stirring, bring to a full boil, add pectin, stir and bring back to a full rolling boil, and boil hard for one minute. Ladle into sterilized jars, add a fresh sprig of herb. Seal.
Makes 3 cups jelly.

Single herb suggestions: thyme, rosemary, sage, basil, mint, or scented geraniums.
